Baked Mandarin, Ginger and Yogurt Ice Lollies

Hot days match with happiness and ice lollies, picnics and ice lollies, friends and ice lollies, sunbathing and ice lollies and more and more ice lollies. It is definitely ice lollies time folks. Let’s prepare them.

Makes 4 lollies:

  • 4 organic mandarins, segmented, without skin
  • 100g organic natural yogurt
  • 1/2 teaspoon ginger, freshly ground
  • Honey to taste

1 – Cut the mandarin segments in small pieces, add them to a pan and mix with the ginger and some honey. Cook it for about 3 minutes (just to smoothen it) and then let it cool down.

2 – Pour some orange mix into the ice lollies moulds.

3 – Pour some natural yogurt over the orange mix (add some honey if you would like to make it sweet).

4 – Add the remaining orange mix.

5 – Finish by popping a stick into the ice lollies moulds and put it in the freezer until solid.
