I was wondering what I could do with all the pumpkins and squashes that I used for the decoration of my Halloween party. What did you do with yours? I still have my craved “monster pumpkin” in the garden but this year I bought some nice small organic pumpkins and squashes and I really would like to eat all of them.
The benefits of eating pumpkins and squashes are amazing. They are rich in vitamins A, B and C, are a source of fiber and are rich in potassium, manganese and magnesium. We will talk about this vegetable again but for now no “trick or treat” as today’s suggestion is Roasted Squash and Onions.
Ingredients
- 1 squash
- Some small onions
- Olive oil, sage, pumpkin seeds, black pepper and salt to taste1 – Preheat the oven to 200ºC.2 – Clean the squash and slice it in small pieces of approximately 1.5cm.
3 – Halve the onions.
4 – In a baking sheet put the sliced squash and onions, drizzle it with some olive oil and sprinkle with chopped sage, black pepper and salt to taste.
5- Bake for about 20 to 25 minutes, until the squash are soft.
6- Sprinkle with some pumpkin seeds and serve.
Tips
1) You can grate some parmesan cheese on the top of your dish when still warm.
2) I used an organic squash that had a thin skin, if you do not use an organic vegetable or your squash has a thicker skin is better to peel it during step 2.
Abóbora e Cebolas Assadas
Fiquei pensando o que eu poderia fazer com todas as abóboras que eu usei na decoração da minha festa de Halloween. O que você fez com as suas? Eu ainda tenho a minha “abóbora monstro” no jardim, mas este ano eu comprei algumas abóboras orgânicas bonitinhas e pequenas e eu realmente gostaria de comê-las todas.
Os benefícios de comer abóboras são incríveis. Elas são ricas em vitaminas A, B e C, são uma fonte de fibra e são ricas em potássio, manganês e magnésio. Parece que ainda vamos falar sobre este vegetal algumas vezes, mas por agora nenhuma “gostosuras ou travessuras” a sugestão de hoje é Abóbora e Cebolas Assadas.
Ingredientes
- 1 abóbora
- Algumas cebolas pequenas
- Azeite de oliva, sálvia, sementes de abóbora, pimenta do reino ralada e sal a gosto
1 – Preaqueça o forno a 200ºC;
2 – Limpe uma abóbora e corte-a em pedaços pequenos de aproximadamente 1,5cm;
3 – Corte as cebolas pela metade;
4 – Em uma assadeira coloque a abóbora cortada e as cebolas, regue com um pouco de azeite de oliva e polvilhe com sálvia picada, pimenta do reino ralada e sal a gosto;
5- Cozinhe por cerca de 20 a 25 minutos, até que a abóbora esteja macia;
6- Polvilhe com algumas sementes de abóbora e sirva.
Dicas
1) Você pode ralar um pouco de queijo parmesão no topo do seu prato enquanto ainda estiver quente.
2) Eu usei uma abóbora orgânica que tinha uma casca bem fininha, logo, cozinhei com a casca, mas se você não usar vegetais orgânicos ou sua abóbora tiver uma casca mais grossinha é melhor descascar antes de cozinhar.

You are very welcome Donna. I’m sorry to hear about your son’s allergy. Luckily this recipe still works very well without onions in that case I suggest that you either add more sage or, alternatively use others herbs like oregano or thyme.
