Pumpkin and Garlic Soup

Who still has pumpkins from Halloween? I have just finished mines with today’s recipe: Pumpkin and garlic soup. If you are a person who adores garlic as much as I do this soup is for you. Believe me it is just out of this world.

Easy to prepare and very healthy, the texture of this soup is smooth, the colour is vibrant and the delicate taste of the pumpkin goes very well with garlic which makes for a terrific combination. Just pay attention when you put the cayenne pepper, it has a distinctive spicy taste and you just need a hint of it otherwise it will overpower your dish.

Nothing better than a nice soup to warm these autumn days. Let’s prepare it!

Ingredients


Serves 2

  • 450 g pumpkin, cooked
  • 350 ml broth (vegetable or chicken)
  • 3 cloves garlic, smashed
  • 1 tablespoon yogurt
  • Olive oil, salt, pumpkin seeds and cayenne pepper to taste

1 – Blend the cooked pumpkin and the broth.

2 – In a saucepan add some olive oil and fry the garlic until golden.

3 – Place the blended pumpkin on the saucepan and add salt and cayenne pepper to taste. After it boils cook the soup for about 5 minutes longer, stirring continuously.

4 – Garnish with pumpkin seeds and yogurt and serve.

Sopa de Abóbora e Alho


Quem ainda tem abóboras da festa de Halloween? Acabei de terminar as minhas com a receita de hoje: Sopa de Abóbora e Alho. Se você é como eu, uma pessoa que adora alho esta sopa é para você. Acredite em mim essa sopa é uma coisa de outro mundo.

Fácil de preparar e muito saudável a textura desta sopa é suave, a cor é vibrante e o sabor delicado da abóbora combina muito bem com o alho e faz uma combinação fantástica. Basta prestar atenção quando colocar a pimenta caiena, pois a mesma tem um sabor picante distintivo, e você só precisa de uma pitadinha, caso contrário ela vai dominar o sabor do seu prato.
Nada melhor do que uma boa sopa para aquecer estes dias de outono, não é mesmo? Vamos prepará-la?

Ingredientes


Serve 2

  • 450 g de abóbora, cozido
  • 350 ml de caldo (vegetal ou frango)
  • 3 dentes de alho, esmagados
  • 1 colher de sopa de iogurte
  • Azeite, sal, sementes de abóbora e pimenta caiena a gosto

1 – Misture a abóbora cozida e caldo;

2 – Em uma panela adicione um pouco de azeite e frite o alho até ficar dourado;

3 – Coloque a abóbora misturada sobre a panela e adicione sal e pimenta caiena ao gosto. Depois de ferver cozinhe por cerca de 5 minutos, mexendo continuamente;

4 – Decorado com sementes de abóbora e iogurte e servir.
