Carrot Pineapple Cake

Do you remember the Christmas parties in your childhood? In my case, I still remember Christmas celebrations at my grandmother’s house. At that time of the year I knew that three things would happen.

First we would always hear the same old vinyl record, which belonged to my grandfather. I still remember my cousins and me singing and dancing around the living room while the adults were chatting in the kitchen.

Second in Christmas festivities I would meet with my cousins and have a great time together but also some small arguments. At that time I had 10 cousins and putting all those children together without having any scraps was almost impossible.

Last but not least, all my aunts would prepare some dishes for the party and one thing that had to be there ware some nice cakes, normally decorated with tropical fruits.

Now that I am an adult I like to remember those moments with love and from time to time I prepare a spiced Carrot Pineapple Cake that reminds me of the good moments I went through  at my grandma’s house.

Ingredients


  • 3 eggs
  • 1 cup vegetable oil
  • 1 cup sugar
  • 3 cups plain flour
  • 2 cups crushed pineapple
  • 2 cups carrot, grated
  • 1 cup walnuts, chopped
  • 1 tablespoon vanilla extract
  • 1 tablespoon baking power
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 2 teaspoons cloves, grounded

1 – Preheat the oven to 180ºC and grease a baking sheet.

2 – In a bowl cream the oil, sugar and eggs until pale, fluffy and smooth.

3 – Add the flour and mix it.

4 – Add the crushed pineapple, the carrot, the walnuts, the vanilla extract, the cinnamon and cloves and stir all ingredients with a spatula.

5 – Add the baking powder and baking soda to the mix.

6 – Bake in the preheated oven for around 30 minutes, or until a thin skewer inserted in the middle of the cake comes out clean.

Decorate as you wish. I used whipped double cream and dried pineapples for it.

If like me you do not like crushed pineapple from a tin you can prepare your own. Just cut the pineapple in small pieces, put it into a pan add 2 tablespoons of sugar and cook it over medium heat for around 8 minutes.

Bolo de Cenoura e Abacaxi


Você se lembra das festas de Natal na sua infância? No meu caso, ainda me lembro das celebrações de Natal na casa da minha avó. Naquela época do ano eu sabia que três coisas iriam acontecer.

Em primeiro lugar, sempre ouviríamos o mesmo velho disco de vinil, que pertencia ao meu avô. Ainda me lembro de meus primos e eu cantando e dançando ao redor da sala, enquanto os adultos conversavam na cozinha.

Em segundo lugar, nas festas de Natal, eu me reuniria com meus primos e viveríamos bons momento juntos, mas também algumas pequenas discussões. Naquela época eu tinha 10 primos e colocar todas aquelas crianças juntas sem ter qualquer briguinha era quase impossível.

Por último, mas não menos importante, todas as minhas tias preparavam alguns pratos para a festa e uma coisa não podia faltar era alguns bolos deliciosos, normalmente decorados com frutas tropicais.

Agora que sou uma adulta, eu gosto de lembrar daqueles momentos com amor e, de vez em quando, eu preparo um bolo de cenoura e abacaxi, temperado com especiarias, que me lembra dos bons momentos que passei na casa da minha avó.

Ingredientes


  • 3 ovos
  • 1 xícara de óleo vegetal
  • 1 xícara de açúcar
  • 3 xícaras de farinha de trigo
  • 2 xícaras de abacaxi em calda, picadinho
  • 2 xícaras de cenoura ralada
  • 1 xícara de nozes picadas
  • 1 colher de sopa de extrato de baunilha
  • 1 colher de sopa de fermento
  • 2 colheres de chá de bicarbonato de sódio
  • 2 colheres de chá de canela
  • 2 colheres de chá de cravo da índia em pó

1 – Pré-aqueça o forno a 180ºC e unte uma assadeira.

2 – Em uma tigela bata o óleo, o açúcar e os ovos até ficarem com uma cor pálida, macio e suave.

3 – Adicione a farinha e misture.

4 – Adicione o abacaxi, a cenoura, as nozes, o extrato de baunilha, a canela e o cravo da índia e misture todos os ingredientes com uma espátula.

5 – Adicione o fermento em pó e o bicarbonato de sódio à mistura.

6 – Asse no forno pré-aquecido por cerca de 30 minutos, ou até que um palito fino inserido no meio do bolo saia limpo.

Decore como você desejar. Eu usei um creme de leite fresco, batido, com abacaxi seco.

Se como eu, você não gosta de abacaxi em caldas em lata, você pode preparar seu próprio em casa. Apenas corte o abacaxi em pedaços pequenos, coloque em uma panela e adicione 2 colheres de sopa de açúcar e cozinhe em fogo médio por cerca de 8 minutos.
