Is everything ready for your Christmas party? I hope so because it is just around the corner. In case you are still not sure about what to eat for your Christmas dinner I am sharing with you a delicious and easy-to-cook starter: Chicken Liver Pâté. The great advantage of this dish is that you can prepare it in advance as it lasts up to 2 weeks in the fridge, when well sealed with butter.
This pâté is just yummy on its own. If you would like to give your starter an additional touch just season your toasts or crackers with a bit of jam or some small red and sweet fruits as pomegranate seeds, raspberry or redcurrant. As you just need a hint of sweetness, make sure you do not use too much jam or fruit otherwise they will overpower the pâté.
Ingredients
Serves 4
- 250gr chicken livers, cleaned
- 125gr butter
- 1 garlic cloves
- 3 shallots, chopped
- 100 ml white dry wine
- 2 tablespoons brandy
- Rosemary, thyme, salt and black pepper to taste
1 – Over a medium heat place a pan, add 1 tablespoon of butter and fry the livers for about 8 minutes, stirring from time to time until cooked. Put the livers into a food processor and leave it aside.
2 – In a pan add 1 tablespoon of butter and sauté the shallots, garlic, rosemary and thyme until de shallots are softened. Add the wine and brandy and cook until the mix results in about 4 tablespoons of sauce.
3 – At this point remove the solids bits from it and add the sauce you made to the food processor.
4 – Add salt and black pepper to taste and blend the mix.
5 – Melt half of the remaining butter, add it to the mix and blend again until you have a smooth and fluffy pâté. Pour it into small bowls.
6 – Over a low heat melt the remaining butter and pour it on top of the pâté, making sure it is fully covered.
7 – Lastly decorate the surface with herbs sprigs and place it in the fridge overnight before eating.
Tips
You can replace the brandy with cognac or Porto wine and I must admit that I even prepared this recipe without it. It works but the brandy gives it a nice touch.
I used rosemary and thyme but you can also season the pâté with a different mix of herbs, for example, sage also works very well with livers.
Patê de Figado de Galinha
Está tudo pronto para sua festa de Natal? Espero que sim, porque o Natal está já aí. No caso de você ainda não ter certeza sobre o que comer no seu jantar de Natal eu estou compartilhando uma entrada deliciosa e fácil de cozinhar: Patê de Fígado de Galinha. A grande vantagem deste prato é que você pode prepará-lo com antecedência, pois ele dura até 2 semanas na geladeira, quando bem selado com manteiga.
Este patê, por si só, é uma delícia, mas se você quiser dar ao mesmo um toque adicional apenas tempere suas torradas ou biscoitinhos salgados com o patê, e um pouco de geleia ou algumas pequenas frutas vermelhas e doces, como sementes de romã, framboesa ou groselha. Como você só precisa de um toque do “doce”, certifique-se de não usar muita geleia ou frutas, caso contrário eles vão “cobrir” o sabor do patê.
Ingredientes
Serve 4
- 250gr fígados de frango, limpos
- 125gr de manteiga
- 1 dentes de alho
- 3 cebolas chalota, picadas
- 100 ml de vinho branco seco
- 2 colheres de sopa de brandy
- Alecrim, tomilho, sal e pimenta do reino a gosto
1- Em fogo médio coloque uma frigideira, adicione 1 colher de sopa de manteiga e frite os fígados por cerca de 8 minutos, mexendo de vez em quando até ficarem cozidos. Coloque os fígados em um processador de alimentos e deixe-o de lado;
2 – Em uma panela adicione 1 colher de sopa de manteiga e refogue as cebolas, o alho, o alecrim e o tomilho até que as cebolas sejam “transparentes”. Adicione o vinho e o brandy e cozinhe até que a mistura resulte em cerca de 4 colheres de sopa de molho;
3 – Neste ponto, coe os pedaços sólidos, e adicione o molho que você fez no processador de alimentos;
4 – Adicione sal e pimenta do reino a gosto e bata a mistura;
5 – Derreta metade da manteiga restante, adicione à mistura e bata novamente até obter um patê suave e fofo. Despeje-o em tigelas pequenas;
6 – Em fogo baixo derreta a manteiga restante e despeje-a sobre o patê, certificando-se de que o mesmo esteja completamente coberto;
7 – Por último, decore a superfície do patê com raminhos de ervas e coloque-os na geladeira, deixe descansar por ao menos uma noite antes de comer.
Dicas
Você pode substituir o brandy por conhaque ou vinho do Porto. Devo admitir que, eu mesma, já preparei esse prato sem usar o brandy e funcionou, mas o brandy dá um toque especial à receita.
Eu usei alecrim e tomilho, mas você também pode temperar o patê com uma mistura diferente de ervas, por exemplo, sálvia também funciona muito bem com fígados.
